This strawberry delight is pretty much the best dessert ever! What’s not to love about having a layered dessert loaded with a graham cracker crust, cheesecake filling, and a strawberry jello and fresh strawberry topping?! I was inspired to make by the classic raspberry pretzel dessert that family members seem to bring to every party or event ever. I always enjoy it and thought a strawberry version would be fun to make!

I think this would be a great dessert to make for all of the holidays and potlucks coming up because it makes a pretty large batch with about 12 servings and it can be made ahead of time so that you don’t have to be spending time in the kitchen right before your event. The other main change I made from the inspiration was using a graham cracker crust because those are always tasty and it goes super well with the cheesecake filling.

Ingredients

For the Crust

  • 2 cups graham cracker crumbs
  • 1/3 cup butter, melted
  • 2 tablespoons sugar

For the Cheesecake Layer

  • 2 (8 ounce) packages cream cheese, softened to room temperature
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (8 ounce) tub cool whip

For the Strawberry Layer

  • 2 cups strawberries, diced
  • 1 (3 ounce) packet strawberry jello
  • 1 cup boiling water
  • 2 tablespoons lemon juice
  • 1/4 cup ice
  • Whipped cream (for serving - optional)

Instructions

  1. Mix the graham cracker crumbs, melted butter, and sugar in a medium bowl until the texture is like wet sand, then press down firmly into a 9"x13" pan. Set aside.
  2. In a large bowl, beat the cream cheese, powdered sugar, and vanilla until smooth. Gently fold in the cool whip then spread it on top of the graham cracker crust. Make sure it reaches the edges to create a tight seal.
  3. Sprinkle the strawberries on top of the cheesecake layer and gently push them down into the cheesecake slightly.
  4. Stir together the jello packet, boiling water, and lemon juice until the jello has dissolved. Stir in the ice until melted, then carefully spoon the mixture over the strawberries.
  5. Allow to chill in the refrigerator for at least two hours before slicing and serving with whipped cream on top (optional).
