Blueberry Cobbler
It’s blueberry season! After going to a local farm and picking blueberries, I decided I wanted to make a simple cobbler to showcase them and I was not disappointed. Each bite has the perfect balance of sweet and tart blueberries and cakey cobbler topping. I like serving it warm with a big scoop vanilla ice cream.
This recipe was inspired by my strawberry cobbler but it can really work with most fruit (or even a mix of fruit and berries).

Ingredients
For the Filling
- 1/3 cup butter
- 4 cups blueberries
- 1/2 cup granulated sugar
- 2 tablespoons lemon juice
- 1 tablespoon cornstarch
For the Topping
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 3/4 cup milk
- 1 teaspoon vanilla extract
Instructions
- Place butter in a 9"x13" baking dish and place in the oven. Preheat the oven to 350 degrees F and remove the baking dish once the butter has melted.
- Meanwhile, stir together the blueberries, sugar, lemon juice, and cornstarch until the blueberries are evenly coated. Pour the blueberries over the melted butter in an even layer.
- In a large bowl, stir together the flour, sugar, baking powder, and cinnamon. Add the milk and vanilla, mixing to combine. Pour the batter over the blueberries.
- Bake in the preheated oven for 30-35 minutes, or until the filling is bubbling and the topping has turned golden.
- Serve warm with ice cream.
