Mug cakes might just be the greatest thing to ever happen to the world of desserts.  Have you tried making one yet because if not, get on that! You need to try making one.  Making a cake in a mug is SO easy and takes less than 5 minutes to make start to finish.  Anyone can make them, no matter what their skill level is which is one of the great parts of a mug cake! My very first mug cake was made exactly one year ago to the day, it was my snickerdoodle mug cake which has been a fan favorite every since.  What’s not to love about a single serving snickerdoodle cake?! Since then, some of my other favorite mug cakes have been my carrot cake mug cake, peanut butter cookie mug cake, and vanilla bean mug cake! All of them are so easy and delicious, especially this coffee mug cake!

I thiink the best part of this coffee mug cake is the fact that I won’t be tempted by having a whole coffee cake sitting on the counter, calling my name.  A mug cake gives you just the right amount of a sugar fix whenever you have a hankering for sweets.  While this mug cake is simple with only a few ingredients, I’ve made ones that took much longer and were significantly more indulgent like the pumpkin spice latte mug cake I made a few months ago.  That one was all dolled up with homemade coffee whipped cream and caramel sauce on top of a pumpkin mug cake.

Something to keep in mind when the mug cake is cooking in the microwave is that it will swell up a bit.  Don’t worry, that’s what is supposed to happen.  Just make sure what ever mug or ramekin you are heating it up in is not completely full.  I’d say make sure there is at least an inch or so at the top, just to be safe.

How to make a mug cake and other helpful tips on this coffee mug cake recipe

• Make sure your mug is microwave-safe! You don’t want to have any accidents with a mug breaking or anything!
• Ramekins are the perfect size for a mug cake too.
• Feel free to use any type of milk.  I usually go for dairy milk or vanilla almond milk.
• Trying to cut out a bit of sugar? You can go down to about 1 tbsp of brown sugar in the base and half the entire crumb topping recipe.
• Subbing in alternative sweeteners like coconut sugar or maple syrup works well too!
• Coconut oil works as a substitute for butter in this mug cake recipe.

Ingredients

Mug Cake

• 1/4 cup all-purpose flour
• 2 tbsp brown sugar
• 1/4 tsp baking powder
• 1/4 tsp cinnamon
• 1/2 tsp vanilla extract
• 1/4 cup milk
• 1 1/2 tbsp butter, melted

Crumb Topping

• 1 tbsp butter, softened
• 2 tbsp brown sugar
• 1 tbsp flour
• 1/4 tsp cinnamon

Instructions

1. In a small bowl, combine all ingredients for the mug cake except for the ingredients in the crumb topping.  Stir until well combined and smooth.
2. In a separate bowl, combine ingredients for the crumb topping and mix together with a fork until it has a crumb-like texture.
3. Pour mug cake batter into a microwave-safe mug and top with crumb topping.
4. Microwave for 1-1:30 minutes and enjoy! Best served warm.
