Gather the ingredients - * Graham cracker crumbs * Butter * Sugar * Cream cheese * Powdered sugar * Vanilla extract * Cool whip * Strawberries * Strawberry jello packet * Lemon juice * Ice * Water
Mix the graham cracker crumbs, melted butter, and sugar in a medium bowl until the texture is like wet sand, then press down firmly into a 9"x13" pan. Set aside.
In a large bowl, beat the cream cheese, powdered sugar, and vanilla until smooth. Gently fold in the cool whip then spread it on top of the graham cracker crust. Make sure it reaches the edges to create a tight seal.
Sprinkle the strawberries on top of the cheesecake layer and gently push them down into the cheesecake slightly.
Stir together the jello packet, boiling water, and lemon juice until the jello has dissolved. Stir in the ice until melted, then carefully spoon the mixture over the strawberries.
Allow to chill in the refrigerator for at least two hours before slicing and serving with whipped cream on top.
