As one of those desserts that I remember my mom bringing to parties and potlucks as a kid, they have a special place in my heart as a yummy dessert that was great for sharing. I recently made my classic lemon poke cake recipe for a party and was inspired to experiment and make a few other poke cake varieties. This one is inspired by my very favorite cocktail, a piña colada!
To start it off, you need a box of white cake mix. It may sound like cheating to have boxed cake mix in a recipe but trust me, it is the best base for this cake and it’s super easy. Once it’s baked, you poke hole in it and cover it with prepared piña colada pudding made from vanilla pudding, coconut milk, pineapple, and a bit of rum (feel free to skip if you don’t want the booze in the cake) that hasn’t set. To finish it off, the whole cake gets coated in cool whip and shredded coconut.

Ingredients
- 1 (15.25 ounce) box white cake mix *(plus the ingredients listed on the back of the box)
- 1 (14 ounce) can coconut milk
- 1 (20 ounce) can crushed pineapple (including the juices)
- 1 (3 ounce) package vanilla pudding
- 2 tablespoons rum (optional)
- 1 (8 ounce) tub cool whip
- 1 1/2 cups sweetened shredded coconut
Instructions
- Prepare cake mix according to the instructions on the back of the box in a lightly greased 9x13 baking dish.
- In a large bowl, stir together the coconut milk, crushed pineapple (including the juices), vanilla pudding mix, and rum (optional) until well combined.
- As soon as the cake is done baking, a straw or chopstick to poke holes all over the surface of the cake, then pour the pineapple mixture over the top. Smooth with the back of a spoon.
- Allow the cake to cool to room temperature before placing in the refrigerator to chill for at least 3 hours.
- Before serving, spread the cool whip on top and sprinkle with shredded coconut.
- Slice and serve.
