With Valentine’s Day right around the corner, I wanted to share a classic chocolate truffle recipe that will impress your special someone (or really anyone you decide to share them with)! I am a huge fan of truffles so some variety will show up at pretty much every party or holiday. While I love trying crazy new varieties, I also really like just making a classic chocolate truffle from time to time. You can roll them in whatever toppings you like but I personally went with cocoa powder, crushed pecans, and chocolate spinkles so that there was some variety. You can even skip this step if you want but I think it adds a nice extra bit of texture and helps hide imperfections in the truffle!

Chocolate Truffles

Ingredients
Truffles
- 8 ounces high-quality dark chocolate
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
Toppings (optional)
- Cocoa powder
- Chopped pecans
- Chocolate sprinkles
Instructions
- Chop chocolate into small pieces and add to a large bowl.
- Heat the cream until steaming, then pour it over the chocolate in the bowl and allow to sit for about 2 minutes.
- Stir until the chocolate mixture is smooth.
- Cover and then transfer to the fridge. Allow to chill at least 2 hours.
- Using a 1" cookie scoop, scoop the mixture and then place it onto a parchment-lined baking sheet. Repeat until the chocolate mixture is gone.
- (Optional) Roll each truffle in cocoa powder, sprinkles, or chopped pecans and then place back onto the lined sheet pan.
- Place back into the fridge until ready to serve.
