Piña Colada Lime Cooler

I can’t believe it is already summer! It’s supposed to be 90 down here this week which is kinda a bit too hot for me so I decided it was about time to start whipping up some other frozen and iced drinks as a fun way to cool off! Last week I made a Snickerdoodle Iced Coffee which has been SO popular and it tasted fantastic!

This week, I wanted to go for a more fruity drink and I had leftover pineapple from making blueberry pineapple fruit salsa which worked out so well! This Piña Colada Lime Cooler is such a refreshing drink that just screams summer! I think the addition of lime to a piña colada added a great new flavor! I was amazed that my incredibly fussy little sister even thoroughly enjoyed it, that is the true mark of approval! If you want to make it boozy, add in a bit of rum!

I ended up making this right after going camping in Indiana, which ended up a really nice trip! We all hopped in the RV and just relaxed down there for a few days.  It was only about 4 hours away and about 3 miles over the border into Indiana! It felt kinda weird not to have to make anything new for the site at all for a few days and to basically be completely off the internet because it was so spotty!

Ingredients

• 4 cups fresh pineapple, chunks
• 1/4 cup cream of coconut
• 2 tbsp fresh lime juice
• 2 cups ice

Instructions

1. Combine all ingredients in blender and blend until smooth.
2. Pour in a glass and garnish with lime slices and pineapple chunks. Enjoy!
