Snickerdoodle Cheesecake Bars
Gather the snickerdoodle ingredients - * Butter * Brown sugar * Egg * Vanilla extract * Flour * Baking powder * Cinnamon
– In a large bowl, combine the melted butter and brown sugar. Whisk to combine. Add the egg and vanilla, mix to combine. Scrape down the sides of the bowl as necessary. – Next, add the flour, baking powder, and cinnamon. Mix just until no large lumps of flour remain.
Place two-thirds of the mixture into the bottom of the pan and press it into an even, compact layer. Set the remaining third of the snickerdoodle mixture aside for later.
Gather cheesecake ingredients - * Cream cheese * Sour cream * Sugar * Egg * Vanilla extract
– Add the softened cream cheese, granulated sugar, and sour cream to the bowl of a stand mixer fitted with the paddle attachment. Beat until combined. – Next, add the egg and vanilla and mix until smooth.
Pour the cheesecake layer over the snickerdoodle layer.
Sprinkle the reserved third of the snickerdoodle layer over the cheesecake layer.
Gather topping ingredients - * Cinnamon * Sugar
In a small bowl, combine the sugar and cinnamon. Sprinkle it evenly over the top of the cheesecake bars.
– Bake for 35-40 minutes, or until the bars are golden brown around the edges and fully set in the center.
– Allow the bars to cool to room temperature and then transfer them to the fridge to chill completely. Slice and enjoy.
