In a large mixing bowl, mix the cream cheese, 4 ounces of white chocolate (melted), pumpkin puree, powdered sugar, and pumpkin pie spice until well combined.
– Stir in crushed graham crackers until combined. – Chill the mixture for at least 2 hours. – Shape the mixture into 24 equal sized balls that are about 1.5-2 tablespoons each.
– Chill the truffles in the fridge for at least 30 minutes. – Dip each truffle in melted white chocolate and allow the excess to drip off.
Place the dipped truffles on a parchment lined baking sheet and sprinkle with additional graham cracker crumbs. Return to the fridge to chill for an additional 30 minutes before serving.
