Gather the ingredients - * Instant vanilla pudding * Milk * Half-and-half * Peppermint extract * Red food coloring * Cool whip * Crushed candy canes
Place the oreo cookies into a food processor and pulse until finely ground.
Add the butter and pulse again until mixed throughout.
Press mixture into the bottom and up the sides of a 9" pie dish, place into fridge while filling is prepared.
In a large bowl, add the pudding packets, milk, and half-and-half and mix until smooth.
Stir in the peppermint extract and a small amount of red color.
Gently fold in 2 cups of whipped topping.
Smooth the mixture into the prepared crust, then allow to chill for at least 4 hours.
Add the remaining whipped topping and garnish with crushed candy canes just before serving, if desired.
