Gather the ingredients - * Chocolate cookie crumbs * Sugar * Butter * Cream cheese * Sour cream * Heavy cream * Powdered sugar * Vanilla extract * Melted chocolate chips
In a medium bowl, mix together the chocolate cookie crumbs, sugar, and melted butter. Press down into the bottom of a 9" springform pan before setting aside.
In the bowl of a stand mixer with the whisk attachment, whip the heavy cream on high speed until stiff peaks form. Transfer to a bowl and set aside in the fridge until needed.
Beat the cream cheese and powdered sugar in the bowl of the stand mixer with the paddle attachment until light and fluffy. Add the sour cream and vanilla, mixing until smooth.
Add the melted chocolate chips and mix until completely combined.
Gently fold in the whipped cream, being careful not to overmix.
Pour the mixture on top of the crust, then cover and place into the refrigerator to set for at least 4 hours.
Slice and serve with additional whipped cream.
