Gather the ingredients - * Cream cheese * Powdered sugar * Vanilla extract * Graham crackers * Chocolate chips
In a medium bowl, mash together the cream cheese, vanilla extract, powdered sugar, and graham crackers until evenly combined.
Scoop 1 tablespoon portions onto a parchment-lined baking sheet and place into the fridge to firm up, about 2 hours.
Once chilled, roll into smooth balls and place back into fridge for 5 minutes.
Meanwhile, melt the chocolate until smooth, then carefully dip each truffle into the chocolate coating and return to the baking sheet.
Decorate with extra chocolate drizzled, and/or crushed graham cracker (if desired).
