This has to be the best homemade pancake recipe ever.  Yup, these pancakes are that good! Light and fluffy buttermilk pancakes with little bits of cream cheese and strawberries right inside the batter and topped with a delicious homemade strawberry syrup made with fresh strawberries.  Really, what could be better? This is a simple pancake recipe that anyone can make and they are perfect for an impressive spring-time brunch recipe! These pancakes would also be perfect for breakfast Easter morning!

  • This recipe only makes 9 pancakes so if you are making this recipe for more than 2-3 people, double it!
  • The strawberry syrup is optional but oh so delicious.  It really takes the pancakes to a whole new level but if you have premade strawberry syrup, that also works.
  • If you don’t want to deal with placing little bits of cream cheese in each pancake, you can just pop all of those ingredients in the blender and blend until well combined.  Then the cream cheese will be right in the batter.

Ingredients

Strawberry Cheesecake Pancakes

  • 1 1/4 cups all-purpose flour
  • 1 1/4 cup buttermilk
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 large egg, beaten
  • 1/2 cup strawberries, diced
  • 1/4 cup cream cheese
  • Butter

Strawberry Syrup

  • 1/2 cup strawberries, diced
  • 2 tablespoons granulated sugar
  • 1 teaspoon fresh lemon juice

Instructions

Strawberry Syrup

  1. In a small saucepan, combine ingredients for syrup.  Bring to a boil over medium-high heat, stirring consistency.  Let boil for 2-3 minutes before turning down to a simmer.  Simmer for 20-25 minutes.

  1. In a large mixing bowl, combine flour, buttermilk, sugar, baking powder, baking soda, and egg.  Mix until well combined.
  2. Cut cream cheese into small pieces, mine were about 1/4" cubes.
  3. Lightly spread butter over either a griddle or a pan over medium heat.  Pour 1/4 cup of batter and spread evenly into a circle.  Place a few pieces of cream cheese into the pancake and a few pieces of diced strawberries.  Cook until the edge of the pancake starts to brown and bubbles start to form.  Flip and cook until the bottom browns.  Repeat with remaining batter.  To get golden rings on pancakes, put a bit of butter on the griddle before pouring each pancake.

Serving

  1. Serve pancakes topped with strawberry syrup and whipped cream.

I saw your recipe right before I went to the market so I bought all the ingredients I needed. I am the most popular person in my family at the moment becasue I made these for breakfast....
