These brownies are the BEST! Made with three distinct layers of chocolate-y goodness, each bite is so tasty and perfect. You start out with a chocolate chip cookie layer followed by a layer of oreos and finished with a fudgy brownie topping. The recipe may look like it has a lot of ingredients but don’t worry, most a repeats that are used in multiple layers such as butter, sugar etc.
Another great thing about this recipe is that it makes about 20 servings which is about double a regular brownie recipe so this is a recipe that works well to make for holidays and parties. I like servings these brownies with a big scoop of vanilla ice cream and a drizzle of chocolate sauce.

Ingredients
For the Cookie Layer
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup butter, melted
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups chocolate chips
- 24 oreos
For the Brownies Layer
- 3/4 cup butter, melted
- 1 1/2 cups granulated sugar
- 1/2 cup brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup cocoa powder
- 3/4 cup all-purpose flour
- 1/2 teaspoon salt
- 2 cups chocolate chips
Instructions
For the Cookie Layer
- Preheat the oven to 350 degrees F and line a 9x13 baking tin with parchment paper and set aside.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, stir together the melted butter, brown sugar, and sugar.
- Add in the eggs and vanilla and mix until well combined.
- Stir the flour mixture into the wet ingredients and once combined, fold in the chocolate chips.
- Transfer to the prepared pan and press down evenly (using greased fingers or a spatula helps).
- Press the oreos into the cookie layer evenly.
For the Brownie Layer
- In a large bowl, whisk together the melted butter, sugar, and brown sugar until smooth.
- Add the eggs and vanilla, stirring again.
- Stir in the cocoa powder, followed by the flour and salt.
- Fold in the chocolate chips, then spread the brownie batter evenly over the cookie layer.
- Bake in the preheated oven for 45-55 minutes, until they are starting to crackle and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow to cool for at least 40 minutes before slicing and serving.
