If you are as big of a fan of the samoas cookies that the Girl Scouts sell as me, then this is the recipe for you! Even if you have never had the amazing little cookies, these bars are the perfect combination of chocolate, caramel, and coconut that anyone will love! To start out, you make a cookie base from a few simple ingredients – flour, brown sugar, butter, and vanilla – which you bake for a few minutes. You then top it with a completely amazing filling made from melted caramels and toasted coconut. To finish it off, drizzle some chocolate and ta-da! You have a samoa bar!
These bars came into being when it wasn’t Girl Scout cookie season but I needed my samoas fix. I think they turned out even more amazing than the original cookie!

Samoa Bars - A delicious spin on the classic Girl Scout cookie! Made with a homemade cookie base and topped with a layer of caramel coconut filling and a drizzle of chocolate.
Ingredients
For the Cookie Layer
- 1 1/4 cups all-purpose flour
- 1/3 cup brown sugar
- 8 tablespoons butter (melted)
- 1 teaspoon vanilla extract
For the Coconut Layer
- 11 ounce bag of soft caramels
- 2 tablespoons water
- 2 1/2 cups shredded coconut (toasted)
- 1 cup chocolate chips
Instructions
For the Cookie Layer
- Preheat the oven to 350 degrees F. Line a 9x9" pan with parchment paper.
- In a large bowl, whisk together the flour and brown sugar. Add the melted butter and vanilla extract, mix to combine. Mix until a crumbly dough forms.
- Press the mixture into the bottom of the prepared pan and bake for 10-12 minutes, or until the crust is golden brown.
- Set aside to cool completely before continuing.
For the Coconut Layer
- In a small saucepan, combine the caramels and water. Cook over medium heat, stirring often, until the caramels are fully melted.
- Add two cups of the toasted coconut to the melted caramel and stir to combine.
- Pour the mixture over the cooled crust and top with the remaining 1/2 cup of coconut.
- Allow the mixture to sit at room temperature until the caramel layer has set.
- Once the caramel has set, slice into bars.
- Melt the chocolate chips (either in the microwave or a double boiler) and drizzle it over the bars.
- If desired, dip the bottom of the bars into the chocolate as well.
- Transfer the bars to the fridge and allow the chocolate to set before serving.
- Store in an airtight container in the fridge for up to 5 days.
