Simple snacks are the best! These peanut butter oat bites are a favorite snack of mine to make midday when I need a pick-me-up. They are easy to make and really tasty! I like to add crushed peanuts and mini chocolate chips to mine but you can always add in other things instead such as flax seed or chia seeds if you want a healthier spin or any other small mix-in.

Ingredient Notes –

  • Quick cooking oats are a bit softer than old fashioned oats but either one will work in this recipe.
  • All natural peanut butter is wetter than classic peanut butter– and we need the extra moisture in this recipe so the balls aren’t too wet. Just make sure to give it a good stir before you measure.
  • Honey adds sweetness and earthy flavor but it also helps hold the balls together.
  • Vanilla enhances the flavor of the peanuts and chocolate.
  • I’m adding mini chocolate chips and chopped peanuts but both of those ingredients are optional– you could swap them for mini m&ms, raisins, anything small enough to fit inside of the ball would work.

Ingredients

  • 1 cup quick-cook oats
  • 1/4 cup all natural creamy peanut butter
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons mini chocolate chips
  • 2 tablespoons finely chopped peanuts

Instructions

  1. Add the oats to the bowl of a food processor and pulse until they form a coarse flour (about 10 pulses). Remove them to a small bowl.
  2. In the same food processor (no need to wash it), pulse the peanut butter, honey, and vanilla until it is well combined.
  3. Add the oats back to the food processor and pulse until a ball of dough forms - if a dough doesn't form after 10 pulses, add 1 tablespoon of water and pulse again.
  4. Transfer the dough to a bowl and add the mini chocolate chips and chopped peanuts. Mix to combine.
  5. Scoop the dough into 1" portions and roll them in your hands to create smooth balls. Repeat with remaining dough and serve.
  6. Store the oat bites in the fridge in an airtight container for up to three days.
