After discovering the joys of making edible no bake cookie dough at home all the way back in 2017, it has been one of my go-to easy desserts! With Christmas right around the corner, I wanted to try taking one of my favorite holiday flavors and turning it into cookie dough – gingerbread! Now if you’ve been around for a while, you might know that I love gingerbread.  Whether it is gingerbread truffles, gingerbread white russians, or gingerbread lattes, I have made it.  It seemed like the naturally flavor to turn into a cookie dough!

Now this recipe may be no bake but it comes with a stipulation.  You should really cook the flour before making it which is a 5 minute process and you can always cook extra so that if you want to make more no bake cookie dough, you won’t have to worry about cooking it right then.

Common Questions About Making Edible Cookie Dough

Is it safe to eat cookie dough?

If there is raw eggs or raw flour, technically no.  While all of us have definitely had our fair share of cookie dough right off the spatula, raw eggs and flour are a no-no.  Now that being said, it is up to you how concerned you are about raw flour but it is a raw food and there could be bacteria in it.

How do I bake flour?

If you are concerned about any bacteria in flour, preheat oven to 350°F, spread flour in a baking sheet lined with aluminum foil, and bake for 5 minutes.  It’s a super easy process.

What other flavors of edible cookie dough can I make?

There are so many options! Some of my favorite types of cookie dough include –

  • Sugar Cookie
  • Chocolate Chip
  • Snickerdoodle
  • Peanut Butter

Can I turn edible cookie dough into cookies?

No, please do not do that.  There are no eggs, baking soda, or baking powder so your cookies would turn out flat and sad.

No Bake Gingerbread Cookie Dough – The perfect amount of gingerbread cookie dough for two! Eggless and takes just minutes to make!

Prep Time 5 minutes
Total Time 5 minutes

Ingredients

  • 1/2 cup all-purpose flour*
  • 1/4 cup brown sugar
  • 1/4 cup butter (softened)
  • 1 tablespoon milk
  • 1 teaspoon molasses
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/4 teaspoon salt
  • 1/4 cup white chocolate chips (optional)

Instructions

  1. In a small mixing bowl, combine butter, sugar, and molasses. Mix well before adding remaining ingredients. Once fully combined, divide between two bowls and serve.

Notes

*If you are concerned about any bacteria in flour, preheat oven to 350°F, spread flour in a baking sheet lined with aluminum foil, and bake for 5 minutes. I suggest you do this.
