Mexican Horchata
This horchata recipe is going to be your new favorite summer drink recipe! Something about it tastes so refreshing and is awesome on a hot day served over ice. I really can’t get enough of it right now!
Horchata is a Mexican drink that I have been dying to try making at home for a while now after I tried it at a local restaurant and fell in love with it. It is super easy to make and requires just a few simple ingredients that you probably already have at home. This recipe can be made ahead of time and served later so it’s great for parties and summer BBQs. Additionally, this recipe makes 2 servings but it can very easily be doubled, tripled, or even quadrupled.
When I serve horchata, I like to line the rim of the glass with cinnamon sugar just for an extra bit of flavor. To do so, I simply mix 2 tablespoons of granulated sugar and 1/4 teaspoon cinnamon together on a plate and then I cover another plate with either enough water or light corn syrup to coat the very top of the rim. Then, I place the cup in the water/corn syrup and then into the cinnamon sugar. The water works but it may not coat as evenly as the corn syrup will.

- 2-3 tablespoons granulated sugar*
- 1 teaspoon vanilla extract

Instructions
- In a blender (or a large mixing bowl with an immersion blender), blend long grain rice, cinnamon stick, water, vanilla extract, and sugar until the rice is ground up a bit, but not completely.

Notes
*Add more sugar to taste, I have found that it is up to personal preference how sweet you want it. I tried 1/4 cup sugar and found it to be much too sweet for my taste.
