This ice cream recipe is going to change your life. I know, it sounds like an overstatement but trust me, it is so so so delicious! It’s made with just heavy whipping cream, sweetened condensed milk, vanilla extract, and instant espresso powder, taking just a few minutes to whip up (plus freezing time). It has the perfect amount of coffee flavor that we all love and it is so great with a drizzle of bourbon salted caramel sauce (or just classic salted caramel sauce if you don’t like bourbon).
Make sure to leave yourself enough time before you plan on serving it, I like to make it a day ahead and let it freeze overnight so that no one ends up with a bowl of ice cream that didn’t set correctly. The only other major pitfall is just make sure that you are using sweetened condensed milk, not evaporated milk! Seriously, evaporated milk will not work and this is a common mistake people make when making homemade ice cream. Apart from that, this is such an easy recipe to make!

Ingredients
- 2 cups heavy whipping cream
- 2 tablespoons instant espresso powder
- 1 can sweetened condensed milk (14 ounces)
- 2 teaspoons vanilla extract
Instructions
- In a large mixing bowl, whip the heavy whipping cream on high speed until stiff peaks form.
- Add in instant espresso powder, mixing until combined.
- Fold in vanilla extract and sweetened condensed milk.
- Transfer to a loaf pan and freeze for 6+ hours.
- Scoop out and enjoy with toppings of your choice.
- Store tightly wrapped in the freezer for up to three weeks.
Notes
* You can substitute in 1 teaspoon coffee extract for the vanilla extract if desired.
