Banana bread is seriously so good. I always enjoy having it in various forms whether with walnuts in it, as muffins, or as a classic loaf. After waiting quite a while for my bananas to finally become overripe, I finally could make this bread! I was so excited about it! It was such an great breakfast to have any day of the week!
Now I will be honest, I make a ton of banana bread in my day to day life because I have a terrible tendency to forget about my bananas until they are completely brown. I’ve been adding chocolate chips to it recently and it has been AMAZING! The chocolate compliments the bananas so well.

Ingredient Notes –
- The more ripe your bananas, the better! 1 cup of mashed banana is about 3 large bananas.
- Butter adds richness and moisture to the banana bread. I’m using salted butter so if you’re using unsalted, make sure to add 1/4 teaspoon of kosher salt.
- Brown sugar sweetens the bread and enhances the earthy flavor of the bananas.
- Egg binds the bread together so it isn’t too crumbly.
- Vanilla enhances the flavor of the banana and chocolate.
- Flour gives the bread structure. Make sure to measure using the spoon and level method so you don’t end up with too much – it can make your bread dry.

Ingredients
- 1 cup mashed ripe banana
- 1/2 cup butter (melted)
- 1/2 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350 degrees F and line a 9"x5" loaf pan with parchment paper. Spray it lightly with nonstick baking spray.
- In a large bowl, whisk together the mashed banana, melted butter, brown sugar, egg, and vanilla extract.
- Add the flour and baking soda. Mix just until no large lumps remain.
- Add the chocolate chips and fold them in gently.
- Transfer the batter to the prepared pan and top with additional chocolate chips, if desired.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the bread from the oven and allow it to sit on a wire rack for 10 minutes. Then, remove the bread from the pan and allow it to cool to room temperature before slicing.
- Store any leftover banana bread in an airtight container in the fridge for up to three days.
