It’s Freaky Friday time again! This time, it is our yearly virtual cookies exchange and I am so excited to share this cheesecake bar recipe from Hostess at Heart with you guys! Freaky Friday is where a bunch of bloggers are all assigned different blogs and we make a recipe from their site to share! None of us know who is assigned to our site so it ends up a fun surprise and a great way to get to know each other and our sites better! It is organized by Michaela from An Affair from the Heart and it’s so fun!
So for this round, I was assigned Julie from Hostess at Heart! Julie is such a lovely person who has the cutest dog names Maci and she is always sharing incredible recipes that all look delicious! She has so many bread recipes that I am dying to make such as her festive cherry almond kugelhopf bread, cinnamon sugar soft pretzels, and sweet nut holiday bread wreath! These cheesecake bars are so amazing! The bottom is a sugar cookie crust and then it is topped with cheesecake filling and crumb topping. Really, it doesn’t get any better than that. I picked this recipe because I love cheesecake and it sounded like a fun spin on it. These cheesecake bars are perfect for dessert or on a cookie exchange tray!

Cheesecake Bars

Cheesecake Bars - Delicious layered bars with a sugar cookie crust, cheesecake filling, and a crumb topping. Perfect for cheesecake fans!
Ingredients
- 2/3 cup butter
- 2/3 cup brown sugar
- 2 cups all-purpose flour
- 1 cup walnuts, finely chopped
- 1/2 cup sugar
- 16 ounces cream cheese
- 2 eggs
- 4 tablespoons milk
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350 degrees.
- In a large mixing bowl, beat together butter with brown sugar. Add in walnuts and flour and mix until the dough comes together.
- Transfer all but 1/2 cup to the bottom of a 9x13" pan and press it evenly on the bottom. Bake for 12-15 minutes or until it has lightly browned.
- In a large mixing bowl, beat together sugar and cream cheese until smooth. Add in eggs, milk, lemon juice, and vanilla extract. Beat until combined.
- Spread cheesecake filling on top of the crust and sprinkle the crumb topping on top. Bake for 25 minutes.
- Cool before cutting the bars.
