I cannot get over how good these mashed potatoes are! Normally, I am hit or miss on mashed potatoes but holy cow, these bacon beer cheese mashed potatoes are bursting with flavor and are great as a holiday side dish or as a part of a weeknight meal.

It is up to you how much you jazz these potatoes up but I definitly loaded them with bacon, cheese, chives, sour cream, etc when I served them and they were a huge hit.

What kind of beer should I use in this recipe?

For this recipe, I chose to use an IPA because I wanted something lighter that wouldn’t overpower the other flavors.

Can I use white cheddar instead of sharp cheddar?

Yes, you can use white cheddar instead or even mix the two cheeses.

Can I make this into a casserole?

Yes, to turn this into a casserole –

  • Preheat oven to 350 degrees.
  • Make the recipe as instructed and then transfer the beer cheese potatoes into a 2 quart pan.
  • Sprinkle with panko breadcrumbs and extra cheddar cheese.
  • Transfer into oven and cook for 15-20 minutes.  The cheese should have melted.
  • Remove from oven and top with bacon and chives.

Can I make this recipe ahead of time?

Yes, You can always reheat over the stove or in the oven.

What kind of potatoes can I use?

I used russet potatoes but yukon golds or yellow would also work well.

Ingredients

Mashed Potatoes

  • 3 pounds russet potatoes (peeled and diced)
  • 2 cups water
  • 2 cups vegetable or chicken broth
  • 1 teaspoon salt

Beer Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2/3 cup beer (such as an IPA)
  • 2/3 cup milk
  • 2 cups sharp cheddar cheese (shredded)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground black pepper
  • 1/2 cup sour cream

Garnish

  • Bacon
  • Chives

Instructions

Stovetop Instructions

  1. In a large pot over medium high heat, combine diced potatoes, water, chicken broth, and salt to a boil. Cook for 15-18 minutes or until the potatoes are soft. Drain the liquid out.
  2. While the potatoes are cooking, melt the butter in a medium saucepan over medium heat. Once melted, add in flour and cook for 1 minute, stirring regularly. Slowly add in the beer and milk as you stir. Cook for 3 minutes while stirring as the sauce thickens up. Add in the cheese, garlic powder, onion powder, paprika, and black pepper. Remove from heat and stir until the cheese is fully incorporated.
  3. Use a potato masher to mash the potatoes.
  4. Add the cheese sauce and sour cream to the mashed potatoes and mix until well combined.
  5. Serve topped with bacon and chives.

Instant Pot Instructions

  1. Add potatoes, water, chicken broth, and salt into the bottom of an Instant Pot. Seal the Instant Pot and set timer to 8 minutes on manual pressure (HIGH).
  2. Once the timer goes off, do a quick release. Once it is ready to open up, remove the pot and drain the liquid from the potatoes. Set Instant Pot to WARM.
  3. While the potatoes are cooking, melt the butter in a medium saucepan over medium heat. Once melted, add in flour and cook for 1 minute, stirring regularly. Slowly add in the beer and milk as you stir. Cook for 3 minutes while stirring as the sauce thickens up. Add in the cheese, garlic powder, onion powder, paprika, and black pepper. Remove from heat and stir until the cheese is fully incorporated.
  4. Use a potato masher to mash the potatoes.
  5. Add the cheese sauce and sour cream to the mashed potatoes and mix until well combined.
  6. Serve topped with bacon and chives.
